How To Serve Roasted Chicken

Serving a whole roasted chicken can be a simple process. Here’s how you can do it:

Rest The Chicken:

Let the roasted chicken rest for about 10-15 minutes after removing it from the oven. This helps the juices redistribute, keeping the meat moist.

Place On A Serving Platter:

I know what it feels like when you’re just starting out in the kitchen and you’re worried that your chicken cuts end up sloppy and unpresentable. The best way to deal with that is to slice off the chicken pieces during the meal, in front of the guests, or let guests carve their own portions.

Simply transfer the whole chicken to a large, attractive, platter and slice off pieces.

Slicing a whole chicken right at the table gives the impression it’s freshly roasted, making it appear tender and juicy, and sure to make guests’ mouths water.

Carve The Chicken:

Alternatively, if you have experience carving a roasted chicken, by all means, carve away. If you want to keep things neat, carve the chicken in the kitchen and bring the carved pieces to the table.

  • Legs: Start by cutting through the skin between the leg and body of the chicken. Gently pull the leg away from the body and slice through the joint to remove it.
  • Breast: Using a sharp knife, make a vertical cut alongside the breastbone, and then slice horizontally to remove the breast meat in large, even pieces.
  • Wings: Slice through the joint between the wings and the body, then serve the wings alongside.

Optional Garnish:

Add a sprinkle of freshly chopped herbs, a drizzle of the chicken’s juices, or a squeeze of lemon to brighten up the dish.

Serving a whole roasted chicken this way makes for an elegant presentation while also allowing guests to enjoy their meal at their own pace.

Side Dishes:

What I mostly pair with whole roasted chicken are potato dishes. Here are some potato dish options:

  • Roasted potatoes that bake simultaneously with the chicken in the oven. Only instead of roasting along the chicken, they are placed in the pan underneath the chicken. The roasting chicken lies on top of the oven rack, while beneath the rack, you have the potatoes that bake in the liquid of the chicken as it drips on them. You mix into the potatoes a simple sauce mixture too.
  • Roasted Yellow Potato slices also bake in the chicken gravy, while the chicken is being roasted.
  • Roasted potatoes that bake independently of the chicken. Meaning, they don’t bake beneath the chicken.

Preparation Of This Roasted Chicken Dish

Kitchen Tools

  • 1 large oven pan – for accumulating chicken liquids
  • 2 x 2 (large) prong meat forks – for flipping over of whole chicken
  • 1 oven rack – on which to place the chicken
  • 1 piece parchment paper – which is to be placed in the pan, onto which the liquid will be accumulated
  • 1 small bowl – in which to mix the seasoning

There are so many ways to roast a chicken. After cooking the same dishes for years, you begin to feel comfortable to play around with ingredients and preparation techniques. You’ll find 2 ways to prepare roasted chicken. Here’s recipe option number 1. The second option is in the recipe card at the bottom of the page.

Recipe and Prep Option 1 for Roasting Chicken With A Sweet Tinge

Step 1

Pre-heat oven to 440 F. (225 C.). Make sure the chicken is not freezing cold when putting it into the oven.

  • Rub the following sauce mixture on the meat under the skin:
    • 3 tablespoons of natural date syrup
    • 1/6 teaspoon Kosher salt
    • 1 tablespoon of oil beneath the skin.
  • Brush the following mixture all over the chicken skin:
    • 1 tablespoon natural date syrup
    • 1 tablespoon Paprika (Hungarian (sweet), or smoked)
    • 2 tablespoons neutral oil

Step 2

  • Roast in the oven. How?
    • Place a large pan in the oven. The chicken juices with accumulate there.
    • Place the chicken on an oven rack with the breast facing down and the back side up. Place the chicken and oven rack above the pan.
    • Cover the chicken to some degree with parchment paper, and bake 20 minutes.

Step 3

  • Baste the chicken.
    • Remove the chicken and the rack from the oven.
    • Leave the oven on. Lower the heat to 380 F (190 C).
    • Flip the chicken over and place on the oven rack with the breast facing upwards.
    • Pour the chicken juice into a large bowl.
    • Add 1 tablespoon of sweet paprika
    • 1 tablespoon of date syrup.
    • Mix together and baste the skin on the breast.

Step 4

  • Bake uncovered (on 380 F) for another 20 minutes, just until caramelized and a bit reddish to your liking. If you like it a bit blackish, keep baking uncovered.

Step 5

  • Continue baking: Lower the heat to 340 F (170 C), cover the chicken and bake it another 40 to 50 minutes, or until the breast reaches an internal heat of 165 to 172 degrees F (74 to 78 degrees C) for the thickest part of the thigh, and breast.

Tip

  • Ensure a smooth bite: Here are a few pointers:
    • It’s not enough for the chicken to be fully cooked. You want to make sure that your dinner guests’ teeth aren’t going to play ‘tug-of-war’ with the cooked meat.
    • The chicken is tender when a fork smoothly penetrates into the flesh of a thigh with NO RESISTANCE whatsoever. The fork should slide through the meat. If you have to apply even the slightest amount of force in order to insert the fork, it still won’t be pleasantness to bite into.
    • All you do is continue to bake the chicken for a bit longer.

Temperature Alternative

Another option for baking the chicken as far as degrees are concerned is to follow general guidelines for roasting a chicken:

Place the chicken towards the bottom of an oven set to 400 degrees F (200 degrees C). Bake 1 to 1.5 hours. Baste using the instructions in option 1 above.

Ingredients

  • 6 tablespoons sugarless date syrup (date honey) (split up into 3)
  • 3 tablespoons sweet paprika (preferably more red in color) (split up into 3)
  • 1/4 teaspoon table salt

Instructions

OVEN PREPARATION

Preheat the oven to 410°F (210°C) on bake with fan.

PREPARE THE CHICKEN

Pat the chicken dry thoroughly with paper towels.

FIRST SEASONING-BREAST SIDE DOWN

Starting with the breast side, smear 2 tablespoons of sugar-free date syrup (date honey) over the chicken. Sprinkle with sweet paprika and rub in well with your hands. Flip the chicken over and repeat using the same amount of date syrup and sweet paprika.

INITIAL ROASTING

Place the chicken breast side down, uncovered, on an oven rack set above a pan to catch the drippings. Set the oven timer for 2 hours. Roast for 30 minutes, then flip the chicken so it is breast side up.

BASTING MIXTURE

In a small bowl, mix 2 tablespoons date honey, 1 tablespoon sweet paprika, and ¼ teaspoon table salt. Add 5 tablespoons of gravy from the pan beneath the chicken and mix well.

BASTING

Pour the mixture over the chicken breasts and brush thoroughly. Continue basting the breasts several more times using additional gravy from the pan.

LOWER THE TEMPERATURE AND COVER

Reduce the oven temperature to 355°F (180°C). Cover the chicken loosely with tin foil and return it to the oven for 1 hour and 15 minutes.

FINAL BROWNING

Remove the tin foil and bake uncovered for 15 minutes.
