Delicious Potato Boats in Chicken Gravy

Delicious potato boats baked in sauce from baked chicken. Kosher for Passover delicious potato boats in chicken sauce is a great savory, soft and Luscious side dish.

I just love potato boats; ok, who doesn’t love potatoes!?!

I prepare potato boats with a wide variety of sauces. But this one, with chicken gravy, rises above them all for 2 main reasons.

First, many savory recipes, even those of vegetables, call for chicken stock. So, this is better than chicken stock. Why?

It doesn’t contain much water, which means it’s more condensed than chicken stock and the savory flavors are very much more present in the potatoes.

The second reason is that you don’t have to waste any extra time, effort or money on creating or buying, or using up some of your frozen chicken stock.

All you do is take the gravy accumulated in your baked/grilled chicken pan, and pour it over the parboiled chicken boats.

This is a really simple recipe which gets endless praises.

Savory Potato Boats Baked in Chicken Gravy from Pan Under Grilled Chicken.

Ingredients

FOR PRE-COOKED POTATOES

  • 5 medium potatoes with skin on, sliced lengthwise - in boat shapes
  • Tap water to cover potatoes
  • 2 teaspoons kosher salt

FOR GRAVY

  • gravy from pan under chicken grilled/baked on oven rack
  • 1/3 cup olive oil (mild flavor)/other
  • 1 tablespoon ground/dry coriander (it's brown, not green)
  • 1 teaspoon dry oregano
  • 1 teaspoon dry rosemary
  • 1 teaspoon dry cumin powder
  • 1 teaspoon kosher salt

Instructions

  1. Pre-heat oven to 390 Fahrenheit/200 Celsius with top and bottom heat source and not turbo (heat without fan)
  2. Place potatoes and salt in pot in water on high flame, bring to boil and cook on low flame for 20 minutes (from the moment put into water, not from the moment it boiled)
  3. Drain water and dry with paper towels.
  4. Add all spices and oil to pan with chicken gravy (which was originally on parchment paper).
  5. Place potatoes inside and mix so potatoes are covered nicely in gravy.
  6. Bake uncovered for 30 minutes.

Notes

Substitute for chicken gravy: Add 1 tablespoon unsweetened date honey, 1 tablespoon soy sauce and 1 tablespoon sweet paprika to pan. Eliminate salt from gravy ingredients.
