How to Make Baked Chicken and Potato Wedges
Step 1 – Prepare the Chicken
- Mix onions and seasoning with the chicken in an sheet pan.
- Bake the chicken. Leave the oven on, and remove the chicken from the sheet pan, leaving the gravy inside.

Step 2 – Bake the Potatoes
- Place the potato wedges into the same pan with the newly created chicken gravy.
- Roast the potatoes uncovered for 1-1/2 hours, or until they reach your desired softness and crispiness, basting them occasionally.

Ingredient Substitutions
- Oils: Neutral oil (vegetable, cotton, sunflower seed). But you can use any oil you prefer, such as coconut or avocado oil. Choose one that complements the dish’s flavor, as long as you are familiar with it and know that it won’t have an over-bearing aroma or bitter taste, like olive oil has sometimes.
- Tomato Paste: If you don’t have tomato paste, ketchup can be used, though it might make the sauce slightly sweeter.
- Spices: Swap out curry powder for 3 teaspoons of your favorite seasoning blend or use additional turmeric for a more vibrant flavor.
- Sweetener: You can use date syrup, bee honey, or even a small amount of maple syrup for the same rich sweetness.
- Potatoes: If you’re not a fan of russet potatoes, feel free to use Yukon Gold or red potatoes.
FAQ
Can I bake the potatoes the day after baking the chicken?

9. Air Fryer
If you’re interested in preparing the chicken and potatoes with different methods, here are a few alternatives:
Air Fryer Method
- Chicken: Air fry each side for 10-13 minutes, or until the chicken reaches an internal temperature of 176°F (80°C). If you want extra crispy skin, continue air frying until it reaches 185-195°F (85-90°C).
- Potatoes: Use minimal oil and spices. Marinate the potato wedges in sauce for 1 hour, then air fry for 25 minutes.
Frying Method – The chicken will come out tasty, but the potatoes may fall apart during frying.
10. Storage and Reheating Options
Storing Leftovers
- Refrigeration: Store the leftover chicken and potatoes in an airtight container in the fridge for up to 3 days.
- Freezing:
- Chicken: Cool completely, freeze the chicken without gravy and freeze the gravy separately for up to 3 months. Thaw overnight before reheating. Note: the chicken may lose some crispness after freezing.
- Potatoes: Best baked fresh in the gravy. Freeze any leftover gravy separately and thaw when needed.
Reheating Options
- Oven: Reheat chicken in gravy at 360°F (180°C) for 10–15 minutes. With potatoes, raise to 400°F (200°C) for 5 minutes to crisp. Don’t use the fan—gravy may splatter.
- Microwave: Cover and heat about 3 minutes. If no gravy, add a small cup of water for moisture. Best for casual serving.

Potato Wedges and Chicken

Savory Potato Wedges in Chicken Gravy - Potatoes roasted in pre-roasted chicken's sweet and savory gravy.
Ingredients
Chicken & Gravy
- 6 chicken drumsticks, patted dry
- 3 large onions, sliced into 1/3" rings
Sauce
- 2 tablespoons unsweetened condensed tomato paste 1½ tablespoon natural date syrup (or bee honey) 1 1½ tablespoons paprika (smoked or sweet (Hungarian) 2 teaspoons turmeric 2 teaspoons curry powder (or ½ to 1 teaspoon cumin powder) 1 cup neutral oil 2 teaspoons Kosher salt ½ black pepper to taste (or ½ to 1 teaspoon)
Potatoes
- 6 medium potatoes, peeled and cut into 1" wedges (or log shapes)
Instructions
Prepare the Chicken
- Preheat the oven to 360°F (180°C), set to top heat
source + fan. - In a large mixing bowl, combine all the sauce
ingredients and mix well. - Place the chicken and sliced onions in a large oven
pan. Pour the sauce over the chicken, brushing it generously on all sides of
the chicken and underneath the skin. - Cover the pan with parchment paper and tin foil and bake for 1 hour.
- After 1 hour, change the heat source to Top-Bottom heat (conventional heat).
- Uncover the pan, and increase the oven temperature to 410°F (210°C). Bake for another 10-15 minutes, or until the chicken skin is golden-brown.
- Once done, remove the chicken from the pan, but leave
the flavorful gravy in the pan for the potato wedges.
Bake the Potatoes
- Preheat the oven to 400°F (210°C) Top-Bottom heat.
- Place the potato wedges into the same pan with the
leftover chicken gravy. - Roast the potatoes uncovered for 1½ hours, or until
they reach your desired internal softness and external crispiness. - Be sure to baste the potatoes with the sauce 2-3 times during the baking process.
Notes
- Chicken is roasted in 1 or 2 oven pans, depending on your oven size.
- If you place 2 pans on separate racks, the upper rack pan will be ready 30 to 40 minutes before the pan on the lower rack.
- Upon removing the upper pan from the oven, transfer the bottom pan to where the top one was, reduce heat back to 360 Fah. and bake for another 30 to 40 minutes.
- I learned the hard way what happens when you use the oven fan with gravy in a pan: The oven gets splattered all over. What a mess!
- Removing the cover: When we want to brown the skin, if we leave the pan covered during this period, the steam from the chicken gets trapped under the parchment paper. This prevents the milliard effect, meaning, the skin will remain moist, with a light tint, and in most cases, not brown.
- For-test the chicken, and then the potatoes for tenderness. If there is any fork resistance, then the chicken or potatoes are not ready.
