Chicken and Caramelized Cabbage

Chicken and Caramelized Cabbage quick prep. non-dairy delicious chicken drums-thighs are roasted in onions and cabbage. Kosher for Passover, Gluten-Free
Ingredients
- 3 chicken drums thighs, dried with paper towels
- 3 large onions, sliced into half rings
- 1/2 small cabbage, coarsely sliced strips - about 1 pound / 450 grams
- 2 tablespoons sweet paprika
- Celery leaves, coarsely chopped (optional)
- 1/2 cup olive oil
- 6 to 9 tablespoons date honey/syrup (unsweetened or sweetened) (see instructions)
- 1 teaspoon kosher salt
- some boiling water according to necessity
Instructions
Preheat oven to 180 degrees. Set timer for around 2 1/4 hours.
Place chicken on parchment paper in oven pan.
Brush date honey on chicken.
Place onions and cabbage in pan.
Pour oil all over and sprinkle salt all over.
Cover with parchment paper, tucking under pan content on sides of pan a bit.
After 1 hour, and then 45 minutes after that, baste with liquid in pan.
If skin is a nice brown, pour 1/2 cup boiling water into pan.
If not, leave uncovered for just a bit to let skins brown.
Then add the water and recover chicken, tucking under content on sides of pan.
Keep baking another 45 minutes.
Notes
If skins haven't browned at all, for some reason, brush another 1 tablespoon of date honey/syrup on each drum connected to thigh (3 spoon-fulls.
However, I don't see why this would be the case.
