Stove Top Chicken and Noodles – Kosher

An easy kosher stove-top chicken and noodle dish, inspired by Lo Mein (no sesame oil). Onions and carrots are essential, peppers and peas optional, all tossed in sugar-free soy sauce and bee honey.

You can chop, or grate the vegetables, or give them a few pulses in a food processor, as in the images below.

If you sprinkle some baking soda on the raw chicken and then rinse it off (or instead, pour some lemon juice on it to neutralize the bitter flavor for 20 minutes), it will come out soft, as is customary in Chinese chicken recipes.

You may also love this baked whole chicken in date syrup which is dairy free.

Delicious and easy Kosher Chicken Lo Mein recipe with red bell pepper, carrots, and defrosted peas. With soy sauce and bee honey. No added processed sugar.

Ingredients

  • 2.2 pounds chicken breasts, sliced into 2" X 1/2" strips.
  • 1/4 cup oil (canola, or other oil)
  • 1 ½ X (10 oz.) package of Lo/Chow Mein noodles, cooked until still a bit uncooked, and strained
  • 2 medium onions, coarsely chopped
  • 3 medium carrots, peeled and coarsely cut into 2/3" X 2/3" cubes (size is optional)
  • 1 large red bell pepper, coarsely cut into 2/3" X 2/3" cubes (size is optional)
  • 1 cup defrosted peas
  • 1/3 cup soy sauce (low in sodium if that suits you)
  • 1/3 cup bee honey
  • 1 teaspoon ginger powder (optional)
  • 1/4 teaspoon black pepper (less or more is optional)

Instructions

  1. In wok above high heat, fry-stir onions and veggies in oil for 7-minutes, adding the onions for 3 minutes first.
  2. Toss in and fry-stir chicken 5 minutes, adding soy sauce, bee honey, black pepper, and ginger.
  3. Throw noodles into wok and sauté another 4 to 5 minutes.
