You’ll love this delicious savory Yellow Rice for any occasion, It’s a Pilaf prep dish, meaning it's an Israeli-Medi (and Middle-Eastern) style rice dish, with different seasoning options to suit your palate. You can add beautiful green pea jewels to the dish too.
Ingredients
- 2 cups long grain rice
- 1½ teaspoons Turmeric powder (or Curry powder)
- 1/3 cup oil
- 1½ teaspoons Kosher salt, or to taste
- White pepper, to taste
- 4⅓ cups hot water (a bit more for Jasmin rice) or vegetable or chicken broth (adjust saltiness)
Instructions
On a small (not extra-small) burner, heat oil in a non-stick medium-small size pot.
Pour in ⅓ cup oil, then mix in 2 cups long grain rice and reduce the heat and stir-cook for 5 minutes.
Pour in 4⅓ cups hot water/broth. Add the turmeric, white pepper, and salt if needed.
Set the heat to high and bring to a boil. Cook UNCOVERED for 5 minutes and until there's hardly any water visible at the top and you see bubbles popping up on top and you see actual holes in between the rice at the top.
Cover the pot, lower the heat, and cook for 10 minutes.
Turn off the heat, set the pot aside covered with a towel on the lid for a bit.
Notes
An Option of Adding an Onion and/or Green Peas:
- 1 finely chopped onion (optional
- ¾ cup frozen peas (optional) (Defrost in a bowl of boiling water.)
Here's what you do:
- After adding the oil to the hot pot, you toss in a chopped onion and sauté/cook it 3 minutes.
- Add the ¾ cup defrosted green peas. Lower the heat and sauté/cook 2 minutes.
- Add the rice and stir occasionally for 4 minutes.
- Toss in the spices (without the salt), and stir for 15 to 30 seconds, making sure they don't burn.
- Pour in 4½ cups hot liquid of your choice. Add salt if the liquid is not salty.
Additional spice options that won't alter the yellow tint:
- ½ teaspoon Cardamom
- ½ teaspoon Curry powder
- ½ teaspoon ginger powder (or a pinch of finely grated fresh ginger)
Fresh Herbs: They will appear in the rice which will be yellow with small greenish patches

- Freshly chopped Cilantro leaves
