Golden and tender, these oven eggplant slices are a simple, flavorful side that pairs with just about anything, especially tahini.
Ingredients
- 1 eggplant sliced vertically into1/2-inch thick circles
- Kosher salt for seasoning
- Olive oil to brush on top of the slices
Instructions
- Slice the eggplant.
- Pat dry and spread out on a parchment lined oven pan.
- Make diagonal slits with a knife only in the upper part of the slices. Don't slit all the way through.
- Sprinkle a few Kosher salt grains over each slice.
- Brush on olive oil with a silicone kitchen brush.
- Roast in oven set to convection heat (fan) for 30 minutes until the side facing up is brown. You can flip in middle if you like. I didn't flip the slices that you see in the feature image.
- Serve with tahini. Either drizzle tahini into the slits you made or serve on the side.
