This Kosher Meat Lasagna is rich, hearty, and full of classic Italian flavor—without any dairy. I was served a similar lasagna while visiting Italy and have loved it ever since.

Made with seasoned ground beef, savory tomato sauce, and layers of pasta, this lasagna is perfect for kosher kitchens, family dinners, Shabbat and holidays when a meat main dish is needed.

Ingredients for Beef Kosher Dairy-Free Lasagna

Is This Lasagna Freezer-Friendly?

Yes! This kosher dairy-free beef lasagna freezes well unbaked or baked. Wrap tightly and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating or baking. I personally don’t freeze it. I think that fresh is always much better.

Ingredients

  • 1 kilo (2.200 lbs) ground beef
  • 2 large onions, chopped
  • 3/4 cup freshly chopped parsley leaves, tightly packed
  • 4 fresh tomatoes (preferably red and juicy), coarsely chopped (or 20 cherry tomatoes)
  • 1 (28 oz.) can of crushed tomatoes (unsweetened) (800 g.)
  • 1/2 cup tomato paste (unsweetened)
  • 1½ tablespoons natural date syrup (or sub with honey or sugar)
  • 1½ tablespoons lemon juice
  • 2/3 teaspoon Kosher salt, or to taste
  • Black pepper, to taste
  • Uncooked lasagna noodles (around 5- 6 noodles per layer x 4 layers of noodles)
  • 2 tomatoes, halved (for topping on the upper layer

Instructions

Sauté Onions:

In a large sauté pan, sauté the chopped onions for 4 minutes over medium heat.

Cook Beef-Sauce Mixture:

Add the ground beef and cook for 5 minutes, stirring occasionally.

Stir in the 4 chopped tomatoes (regular or cherry) and chopped parsley leaves.
Add the crushed tomatoes, tomato paste, date syrup, lemon juice, kosher salt, and black pepper. Sauté uncovered for another 5–7 minutes. Turn off the heat when done.

Preheat Oven:

Preheat the oven to 180°C (350°F).

Assemble Lasagna:

Place a layer of uncooked lasagna noodles in the base of a casserole dish. Break noodles if needed to cover the
base without overlapping.

Pour ⅓ of the beef-tomato sauce over
the noodles.

Repeat two more layers of noodles and sauce.

Finish with a final layer of noodles.

Top with thin slices of 2-3 tomatoes tomatoes to cover the
surface.


Bake:

Place the dish in the oven uncovered and bake for 40 minutes.


Serving Suggestion:

Let the lasagna rest for 10 minutes
before slicing. Serve with a spicy side salad, a green side salad, or a vegetarian soup, such as: a heart warming mushroom barley soup, or a tomato-vegetable mushroom barley soup to cater to all palates.

Notes

1 tablespoon is 1/3 fluid ounce (10 mL).

For adjusting saltiness, always use table salt and not Kosher salt.

Please check your can of crushed tomatoes and tomato paste.

If they have added sugar perhaps you'd care to add less date syrup.

If they have added salt, perhaps you'd care to add less Kosher salt than called for in the recipe above.

Red Wine:

You can add 1/4 cup red wine to the beef-tomato mixture while it's still sautéing on the stove. In this case, add a bit more date syrup. This is an option I've often come across though I have not myself tried it.
