Tilapia Chimichurri

Tilapia Chimichurri

Light, zesty, and bursting with flavor, baked tilapia in a homemade chimichurri sauce is a weeknight dinner you’ll want on repeat.

Why Make Tilapia Chimichurri

This dish is a perfect combination of quick, healthy, and incredibly flavorful. Tilapia is a mild white fish that takes on the bold, herbaceous flavors of chimichurri beautifully.

Plus, this is a sheet-pan style meal with minimal prep and cleanup—ideal for busy evenings or relaxed weekend dinners. The homemade chimichurri adds a fresh twist that’s both vibrant and versatile.

What to Pair With Tilapia Chimichurri

This baked tilapia pairs beautifully with a variety of sides.

Try it with baked potato halves, white rice, or a light tabbouleh pomegranate salad. For something fluffy like cauliflower, go for cauliflower nuggets, a crisp green salad with parsley and dried cranberries, or a cooked eggplant in tomato paste dish. And don’t forget a wedge of lemon on the side—it brightens the whole plate.

Chimichurri Sauce

Ingredients of Tilapia Chimichurri

Here’s what you’ll need:

For the Tilapia:

  • 4 tilapia fillets (fresh or thawed)
  • Lemon juice for marinating

For the Homemade Chimichurri Sauce:

Freshness is the key: Fresh herbs

Red and green bell peppers

White wine vinegar

Minimal spices

Olive oil

How to Prepare Chimichurri Tilapia

Mix Chimichurri ingredients in a bowl or pulse in a food processor. Coat a bit in a parchment lined oven pan and pour the rest on top of the fish and give it all around a 10 minute bake in the oven. Let it sit in the oven for another 10-15 minutes for readiness.

Storage

Store any leftovers in an airtight container in the fridge for up to 2 days. Reheat gently in the oven or microwave until just warmed through. Avoid overcooking when reheating, as tilapia can dry out quickly.

You can freeze the fish with the Chimichurri sauce (not if you left it in vegetables – It will be soggy) and reheat in the oven set to 390 degrees F (200 C) for 10 to 15 minutes, or in a skillet until it’s defrosted and cooked a bit, but add a bit of oil to the skillet first for this.

Tips & Advice

  • Use fresh herbs for the best flavor in your chimichurri—especially parsley and oregano.
  • Don’t over-blend the sauce; Just minimally pulse it. Chimichurri should have a little texture.
  • If using frozen tilapia, thaw it fully and pat it dry to avoid excess moisture.
  • Want a stronger citrus kick? Add a little extra lemon juice or a splash of lime to the sauce.
  • This dish also works great with other white fish like sole or cod.
