Chimichurri Tilapia

Ingredients
FOR THE MARINADE
- Lemon juice from 2 lemons
FOR THE CHIMICHURRI SAUCE
- 1 cup fresh parsley leaves (tightly packed)
- 1/2 red bell pepper, deseeded & minced or diced into 1/3-inch squares (or 1/2 tsp red pepper flakes - optional, for heat)
- 1 green bell pepper, deseeded & minced or diced into 1/3-icnh squares
- 3-4 garlic cloves, minced (or 2 teaspoons garlic powder)
- 2 tablespoons fresh oregano (or 1 tsp dried)
- 2 tablespoons red wine vinegar
- 1½ teaspoons kosher salt or to taste
- Pepper to taste
- 1/3 cup extra virgin olive oil
MID-EASTERN ADDITION (OPTIONAL)
- 3/4 teaspoons turmeric powder
INTO THE OVEN PAN
- 1/2 cup tap water into parchment lined oven pan
Instructions
- Marinate the fillets in lemon juice for 10 minutes.
- Preheat your oven to 400°F (200°C) and lightly grease a parchment paper in an oven pan.
- Mix together all of the Chimichurri ingredients in a large bowl and then spread out 1/4 it in a parchment paper lined oven pan. Add 1/4 cup water to the pan.
- Place tilapia fillets adjacent to each other in the oven pan and pour the rest of the Chimichurri on top to cover them. If fillets have skins on one side, place skins facing down.
- Or: Make thick chimichurri sauce: In a food processor, pulse just a few times the parsley, garlic, oregano, vinegar, red and green bell peppers or red pepper flakes, salt, and pepper. Slowly drizzle in the olive oil while pulsing until the sauce is well combined but still slightly chunky.
- Cover the tilapia fillets with parchment paper and seal well by tucking in the sides of the paper on the top. Cover with tin foil as well (optional).
Bake
- Bake the fillets for 12-15 minutes in an oven pre-heated to oven to 400°F (200°C). Spoon the juices over the tilapia while it bakes.
- Remove the parch and tin foil covering. and bake for another 5 minutes. Don't over-bake so the fillets don't fall apart.
Serve with White rice or Yellow rice.
Alternately, serve with Potato boats, or Potato halves.
You can also serve with Split pea soup, or Mushroom barley tomato soup.
