This lovely, easiest ever-prep healthy broccoli and cottage cheese casserole is delicious, dairy and gluten free. Synonyms: dairy broccoli kugel; dairy broccoli quiche. Great breakfast, brunch, or other main dairy dish; or, serve as an appetizer or starter dish.

Preparation Steps

Step 1 – Defrost the broccoli in a pot on the stove by cooking letting it boil for 7 minutes above a high heat. Chop the broccoli as seems fit to you.

Rid carton of cottage cheese of liquid. Toss defrosted broccoli with cottage cheese into a mixing bowl. Add the rest of the ingredients.

Step 2 – Pour the batter into a casserole Pyrex dish and pop into the over. bake covered then uncover it. That’s it!

How to Serve this Healthy Dairy Broccoli Casserole

Broccoli casserole is a great appetizer or starter dish.

Make slits in casserole while still in the Pyrex. Place on a serving dish, or guests can remove the slices themselves.

Serve hot or cold.

It goes great with fresh salads, such as this Cabbage and bell peppers salad, and Fresh herb-cranberry salad.

    Broccoli Casserole, with American cheese, and eggs and is gluten-free.

    Ingredients

    • 28 ounces frozen broccoli florets (800 grams)
    • 6 pieces American cheese
    • 4 1/2 ounces cottage cheese 3% fat ( 125 grams)
    • 7 ounces yogurt 1.5 % fat (200 grams)
    • 7 ounces Greek Yogurt 15% fat (or more) (200 grams)
    • 2 tablespoons of cornstarch
    • 4 medium eggs
    • 6 tablespoons olive oil
    • 1 tablespoon oregano powder
    • 1 teaspoon Kosher salt
    • some boiling water to defrost broccoli

    Instructions

    1. Preheat oven: 355°F / 180°C.
    2. Pre-cook broccoli: Boil frozen broccoli in water until tender, then drain.
    3. Evaporate excess water: Transfer broccoli to a non-stick skillet with 2 tbsp oil. Cook on high for 5 minutes, stirring, until water evaporates. Do not chop the florets.
    4. Mix ingredients: In a large bowl, combine broccoli with 6 tbsp oil and the remaining ingredients.
    5. Prepare pan: Grease a casserole dish (Pyrex) with 2 tbsp oil.
    6. Bake: Pour mixture into the prepared dish. Bake uncovered, or cover with parchment for the first 25 minutes and check if browning.
  • Cool: Let the kugel cool slightly after baking to prevent it from drying out or hardening.
