Spinach Kugel Passover

This delicious and easy Spinach Kugel is Passover friendly. It’s crustless and gluten-free. It’s healthy and quickly put together. Serve hot or cold, as a starter for a formal setting, or as a main dish for a mid-week meal.

Dairy Ingredients in This Spinach Passover Kugel

It calls for sour cream and feta cheese.

Substitutes: You can use cottage cheese (extracting the liquid as much as possible) instead. Make sure to triple the amount of starch/matzo meal.
Don’t forget to adjust saltiness.

Spinach Health Benefits

As always, it’s important to know exactly what is going to go into our bodies.

According to the US Department of Agragculture,

the nutrition facts for 3.5 ounces (100 grams) of raw spinach are:

  • Water: 91%
  • Energy/Calories: 23 kcal
  • Protein: 2.9 grams
  • Carbohydrate: 3.6 grams – Most of the carbs contain fibers, which is great!
  • Fiber, total dietary: 2.2 grams
  • Sugar, total: 0.4 grams
  • Calcium: almost 1 gram
  • Magnesium: 0.90 grams
  • Iron: 2.7 mg
  • Fat: 0.4 grams

That means that just 3.5 ounces (100 grams) of spinach contain a third of the daily recommended intake of Magnesium for women and a quarter of the daily dietary intake for men; making spinach a good source of Magnesium according to Mayo Clinic.

The same goes for iron, according to the National Health Service of the United Kingdom.

Mayo Clinic also claims it may be beneficial to the immune system.

Preparation of This Passover Spinach Kugel

As is the case with most kugels, they are typically crustless. This makes the entire process a no-brainer.

All you do is sauté an onion with defrosted spinach for a few minutes.

Mix in a bowl with the cheese, potato starch or matzo meal, and eggs.

I used 5 eggs but it you’re going to replace the feta cheese with cottage cheese, which is more watery, you’ll need to triple the binder (starch or matzo meal) and use one less egg.
Don’t forget that eggs themselves contain water.
It’s important to spill out excess liquid in the cheese ingredients.
Bake uncovered in casserole Pyrex where it reaches about an inch beneath the top edge.

Baked crustless cheese spinach kugel that is Kosher for Pessach, and has a gluten-free option.

Ingredients

  • 3 x (10 oz.) packages spinach, defrosted and drained (800g)
  • 1 x (5.3 oz.) carton of cottage cheese (150g)
  • 1 ½ x (8 oz.) cartons of cream cheese (350g)
  • 1 large onion, shredded and rid of some of the liquid
  • 1/3 cup potato starch (or 1/2 cup matzo meal for Pesach, or 1/2 cup corn starch)
  • 1 teaspoon baking powder
  • 4 medium eggs
  • 1½ teaspoons kosher salt
  • 1/4 teaspoon black pepper (optional)
  • 3 garlic cloves, freshly chopped
  • 3 tablespoons olive oil
  • Some oil or spray for greasing casserole Pyrex

Instructions

    Preheat oven to 340 °F (170 °C).

    Toss cubed onion in oil and fry until lightly browned, about 4 minutes. Add spinach and sauté 10 minutes on high to reduce excess liquid.

    Transfer to a large bowl and mix in remaining ingredients. Grease an 8×12 in (20×30 cm) casserole dish and bake uncovered for 35–40 minutes.
