Israeli Chicken Fritter Latkes in Tomato Sauce

Ingredients

Ground Chicken Mixture

  • 450 grams ground chicken
  • 1 medium onion, chopped
  • 2/3 cup matzo meal, coarsely ground
  • 2 medium eggs
  • 1 1/2 teaspoons kosher salt
  • 2 teaspoons granulated garlic powder
  • 2 tablespoons olive oil

Sauce

  • 400 grams canned crushed/cubed tomatoes (without sugar)
  • 1 tablespoon dry chili pepper (cayenne - taste for a tinge of spiciness and add gradually to your liking)
  • 1 teaspoon dry turmeric powder
  • 1 teaspoon kosher salt
  • 1 cup hot water

Instructions

  1. Mix chicken mixture gently.
  2. Form balls and set aside. Do not press down to create balls.
  3. Fry for around 3 minutes in non-stick pan, no oil and no water added to pan. Make sure all sides get a quick sear.
  4. Mix sauce ingredients in bowl. Add to pan with seared chicken balls.
  5. Cook on low, together, for 7 more minutes.

Notes

If you are planning on using regular bread crumbs, use half the amount written above.

Instead of sweet paprika and cumin1 tablespoon Baharat or 1 teaspoon dry curry powder/

(1 teaspoon kosher salt equals 0.21 ounces - 6 grams - according to 0.020 ounces - 590 milligrams sodium (Na) per 1 1/2 teaspoons kosher slat).

2/3 cup matzo meal is 2.15 ounces - 60 grams; or 2/3 cup golden bread crumbs for rest of year
