These are truly tender and delicious turmeric gravy chicken drums & thighs.

This is another great Mediterranean fresh parsley-chicken, slow cook recipe.
It goes without saying that the recipes includes oregano. Fresh oregano is great, if you have any in your fridge. But if not, dry oregano has its magic touch as well.
The reason for the slow-bake is so that one part of the chicken pieces don’t end up over-cooked (a bit harder / less tender), while the other parts are tender. For more even and tender results, a slow-cook on a medium heat is the way to go.
Bake with Potatoes or…
Baking potatoes in the same pan as chicken, is one of the tastiest savory side dishes. Smooth, mouth-watering and luscious, in my eyes, it’s the best dish to accompany these delicious yellow chicken drums-thighs.
However, if you decide to skip adding potatoes to the pan, great side dishes could be mashed potatoes, rice, or pasta.
Tips
- It’s advisable to use 2 aluminum pans, one inside the other for heavier baked ingredients, unless you have the thicker type of aluminum pan.
- Chicken, with the bones, is pretty heavy. If the pan is not strong enough, what could happen is that the gravy could pour out over the sides when removing the pan from the oven.
- Another option would be to use a regular, non-disposable, oven pan with or without an aluminum pan inside (less dishes to wash later)
- It’s also advisable to place a piece of tin-foil in aluminum pans beneath the chicken to prevent dripping of gravy. Thin aluminum pans tend to get tiny holes while baking.
- For those who refrain from letting tin-foil come in contact with their food, placing the chicken and potatoes on parchment paper would be the way to go.
Who’s afraid of oil?
I’m not going to try to convince anyone, including myself, that above a certain amount of oil is good for you. Nope.
However, I am going to say that for the most tender results, baking chicken, or meat, in a sufficient amount of oil (not just 1/3 a cup), along with a slow, low-heat bake, is what enables really tender chicken.
The more water in the pan, the more the chicken is going to cook by the steam, as opposed to baking.
Soft Chicken Skin
Don’t remove covering of chicken at all, and the tops will come out smoother, though very slightly brown.
For the smoothest tops, wet the part of the parchment paper that covers the chicken. This might do the job, depending on your oven.
Delicious Chicken Drums & Thighs in Turmeric Gravy

Turmeric drums-thighs in dry turmeric, fresh parsley & oregano gravy - quick prep, slow bake
Ingredients
- 3 thigh-drumsticks connected units (on bones, with skins) around 2.4 pounds / 1.100 kilograms
- 2 cups fresh parsley leaves, coarsely chopped, 1.4 ounces / 40 grams (some stems are optional)
- 3 potatoes, 1/4 inch slices
- 3 to 4 onions, chopped
- 2/3 cup oil (no need to measure exactly)
- 1 cup of tap water (an approximation)
- 1 tablespoon turmeric (or less - optional)
- 1 tablespoon dry oregano
- 2 cups fresh parsley leaves and some stem, chopped (or a bit more)
- 1 1/2 teaspoons kosher salt
- 1/4 to 1/2 teaspoon black pepper powder (adding black pepper, or its quantity, is optional)
Instructions
Pre-heat oven to 356 degrees Fahrenheit / 180 degrees Celsius, top-bottom oven heat (no fan).
Dry chicken pieces with paper towel and place in 2 doubled tin oven-pans on parchment paper. Do not rinse chicken.
Mix 1/2 amount of parsley and spices with 3 tablespoons oil in bowl, excluding onions.
Do the same with the remainder of parsley and spices in a second bowl.
Place contents of first bowl on potatoes, and the CHICKEN on top.
Pour onions on pan contents. Give them a swoosh with a spoon/ your hand.
Pour contents of other bowl onto this. Run mixture on and beneath the skin.
Pour remainder of oil onto chicken and potatoes. Give it a spoon/hand swoosh.
Add water in one corner (not really on top of anything).
Cover with parchment paper. With fingers, press top parchment paper edges into pan, to seal. It stays in place. You can add tin foil on top. I didn't.
Bake on center rack for 2 hours and 20 minutes. After around 1 1/2 hours, pour gravy all over with spoon.
1/2 hour before the end, if they don't seem to be browning, remove parchment paper from the top. Pour some more gravy all over from time to time.
