Ingredients

  • 15 salmon fillets (boneless, with or without skin on one side)
  • 1½ cups freshly chopped cilantro leaves with stems, tightly packed
  • 1½ cups freshly chopped parsley leaves with some thin stems, tightly packed
  • 5 tablespoons Dijon mustard seeds
  • 1/2 tablespoon Dijon mustard spread (optional for an enhanced mustard flavor)
  • 1 tablespoon white wine vinegar (or white wine)
  • 2 tablespoons lemon juice
  • 6 garlic cloves, crushed or finely grated
  • 2 tablespoons honey
  • 1 teaspoon natural date syrup
  • 2 flat teaspoons turmeric
  • Just barely a pinch of cinnamon (no more)
  • 1/2 teaspoon Kosher salt
  • White pepper, to taste (or 1/2 teaspoon)
  • 3 tablespoons lemon juice
  • 2/3 cup extra virgin olive oil

Serving

  • 2-3 Japanese lettuce leaves for each salmon fillet in a bowl

Instructions

  1. Preheat the oven to 170°C (340°F).
  2. Pat the salmon fillets dry with paper towels and place them in a parchment-lined baking pan.
  3. In a large bowl, combine the pre-rinsed herbs, seasoning, and olive oil.
  4. Spoon the herb mixture onto the top side of the salmon fillets and spread evenly to coat.
  5. Bake uncovered for 15-20 minutes, or until the salmon is cooked through and separates in chunks with a fork. If it flakes, it might be overcooked, but many make it until it flakes anyway.

Notes

1 tablespoon = 10 mL = 1/3 fluid ounce

Don't worry if your salmon fillets are wider or thinner. We still bake them the same amount of time.
