The biggest challenge with chicken and turkey is their low fat content, which can lead to a “rubbery” texture if overcooked. To guarantee a juicy result every time, try these three simple tricks:

  • Don’t Overmix: Handle the meat as little as possible. Overworking the proteins leads to a dense, tough patty.
  • The “Moisture Secret”: Sauté onions in oil and add them to the chicken-turkey mixture. These ingredients release moisture as the meat cooks, acting as an internal “basting” system.
  • Just give them a few minute sauté on each side. We’re not deep frying them so you can add a bit of oil to a non-stick skillet with each new batch.
  • Keep track of the amount of time it took to cook one patty so it comes out moist on the inside.
  • They do not end up crispy on the outside. That would mean that they’d have to stay inside the oil even longer, which would remove the internal moisture.

Ingredients

TO BE FRIED IN PAN AND ADDED TO POULTRY MIXTURE

  • 3 large onions, cubed or chopped for frying of onions

POULTRY MIXTURE

  • 1/3 cup oil
  • 400 grams ground turkey (red flesh - it's actually the female)
  • 600 grams ground chicken breast
  • 2 large scallion stalks, chopped
  • par-boild (3 minutes) 1 cabbage leaf, chopped
  • 3 medium eggs
  • 1/4 cup olive oil (mild aroma)
  • 3 teaspoons cilantro powder
  • 1 teaspoon cumin powder (optional)
  • 1 teaspoon sweet paprika
  • 1 teaspoon basil powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper (optional)

Instructions

  • Sauté the Onions: Heat oil in a pan over high heat and fry the onions for about 10 minutes, stirring frequently, until they are golden brown.
  • Combine: Transfer the browned onions to a large bowl. Add the remaining ingredients and mix just until it's all until well combined. Don't over mix to prevent hard patties.
  • Sear & Cook: Form the mixture into patties and cook in a non-stick skillet or cast-iron pan over medium-high heat until browned and cooked through.
  • Serve: Remove from heat and place on rack. Enjoy your juicy poultry patties!
