Materials

CHICKEN BREAST

  • 2.2 pounds (1 kilo)

BREADING

  • 7 to 8 ounces golden (Panko) breadcrumbs (200 to 220 g)
  • 1 medium egg
  • 0.70 ounces raw sesame seeds (20 g) = 10-20% of breadcrumbs
  • 1 teaspoon 0.210 ounces Kosher salt (6 g)
  • Your choice of oil - start with 1/3 to 1/2 cup and add 3 tablespoons as there is hardly any oil in the pan

Tools

  • 1 non-stick (or cast iron) skillet
  • 1 flat pan for breadcrumbs
  • 1 large bowl or flat pan in which to swoosh around whisked egg plus chicken breasts
  • 1 metal rack on which to cool schnitzels
  • 1 pan to go beneath area of metal rack
  • 1 piece parchment paper
  • some paper towels - to dry chicken breast cutlets
  • 1 cutting board (preferably wooden)
  • 1 meat knife

Instructions

  1. This is the ratio of preparing Boneless Skinless Chicken Breasts
  2. For every 2.2 pounds/ 1 kilogram raw chicken breast - sliced and flattened cutlets.
  3. 2.2 pounds / 1 kilogram of chicken cutlets
  4. 1 medium or large egg.
  5. 7 to 8 ounces 200/220 grams golden breadcrumbs.
  6. 0.70 ounces / 20 grams sesame seeds to breadcrumbs.
  7. 1 teaspoon kosher salt 0.210 ounces / 6 grams.

  10. General Outline for preparing the Schnitzel / Fried Breaded Boneless, Skinless Chicken Breasts
  11. Whisk egg in large bowl or flat, rimmed pan.
  12. Place chicken in egg and swoosh around so all cutlets are covered in egg.
  13. Bread cutlets one at a time and set aside in flat pan on parchment paper.
  14. This takes 2 minutes.
  15. Fry.
  16. Cool on rack.
