Why combine chicken and turkey?
Turkey provides a “meatier” flavor while chicken helps keep the cost down and the texture light.
How to Keep Lean Poultry Patties Juicy
The biggest challenge with chicken and turkey is their low fat content, which can lead to a “rubbery” texture if overcooked. To guarantee a juicy result every time, try these three simple tricks:
- Don’t Overmix: Handle the meat as little as possible. Overworking the proteins leads to a dense, tough patty.
- The “Moisture Secret”: Sauté onions in oil and add them to the chicken-turkey mixture. These ingredients release moisture as the meat cooks, acting as an internal “basting” system.
- Just give them a few minute sauté on each side. We’re not deep frying them so you can add a bit of oil to a non-stick skillet with each new batch.
- Keep track of the amount of time it took to cook one patty so it comes out moist on the inside.
- They do not end up crispy on the outside. That would mean that they’d have to stay inside the oil even longer, which would remove the internal moisture.
What to Pair with Ground Chicken and Turkey Burger Patties
- Crispy Baked Potato Halves: The natural sweetness of the potatoes perfectly balances the savory, browned onions in the meat.
- Pickled White Cabbage: A crisp cabbage slaw made with a vinegar dressing cuts through the richness of the seared patties.
- Aioli Sauce: If you want a tropical twist, the acidity and sugar in charred pineapple elevate the mild flavor of turkey and chicken.
- The “Perfect” Topping: Tartar without relish.
- Green Onion Mayo Dip
- Mushrooms with Rice
- Sweet Raisins with Rice
- Stuffed Bell Peppers
